In the cellar, natural yeasts and whole berry fermentation allow the character of the fruit to come through, while ageing in neutral vessels keeps things honest and unforced.
And then there’s the distillery. A copper pot still, brought from Germany, sits at the centre of a quietly distinctive operation producing Marc, Eau de Vie and fruit liqueurs in small, considered batches. It’s a meeting of heritage and place – European know-how shaped by South African ingredients.
